The enzyme was discovered while studying the fermented soy dish known as “natto.” A researcher was trying to uncover why certain foods had higher fibrinolytic activity than others. He came upon a Japanese fermented soybean food called natto that had large volumes of an enzyme that he coined “nattokinase”, based on where he discovered the enzyme. He later found that a microorganism that was used in the fermentation process was responsible for creating this enzyme. This same microorganism (Bacillus subtilis) is used today in the production of the enzyme.
